How to get realistic steam for a food shot?
I was working with few food stylists, and to get steam, everyone was doing the same: soaked piece of cotton wool or Tampax tampon in a water, placed in a microwave till it start boiling and then quickly put it behind (or inside, when it possible) the food piece .
The shot you see was done exactly as described.
Photographer have 1-2 minutes to get the shot. can be repeated as many times as needed:-)
Oh, one more: to make steam visible you have to highlight it from behind (hair light), not from a front.

P.S Usually smoke is not a good substitute for a steam.
